Coconut Protein Truffles


  • 2 scoops protein powder (e.g. Vega Ona)
  • 1 tablespoon cacao (unsweetened)
  • 1 tablespoon coconut oil (melted)
  • 2 tablespoons shredded coconut
  • 4 tablespoons coconut flour
  • 2 eggs
  • 1 1/2 cup dates (Medjool)


1. Add the dates to food processor or high-speed blender and process until they break down enough to start rolling around the food processor in a big ball.
2. Add all the remaining ingredients except the shredded coconut, and continue processing until fully combined, scraping down the sides of your processor as needed. The dough should stick together easily when pressed without being overly sticky.
3. Scoop out the dough and roll each portion into 1-inch balls. Coat with shredded coconut.
